1 pound organic or local carrots
2 tsp cumin powder
Organic extra virgin olive oil
Christmas Berry Honey
Preheat oven to 425 degrees F
Thoroughly wash carrots and place in a large mixing bowl
Drizzle olive oil, sprinkle sea salt and black pepper to taste, and add cumin powder, mixing well
Lay out dressed carrots on a baking sheet and roast at 425 for 30 minutes or until lightly browned
Remove from oven and drizzle with Christmas Berry honey
