Gourmet salad dressing can be pricey, let alone filled with heaps of refined oils and sweeteners ranging from straight up sugar to corn syrup to maltodextrin - translation: low nutrient sweeteners. But good dressing doesn’t have to be complex nor expensive. This super simple everyday dressing needs only 4 ingredients and takes about 2 minutes to make - you won’t even need to measure! The simplicity of it allows the flavor of Wai Meli Honey to shine and supplies you with the highest quality nutrient rich sweetness. We whip this up often in our farm kitchen - it works on everything from a simple romaine salad, to a massaged kale salad, to a nice mix-in for making tuna or salmon salad. Any honey varietal will work here, particularly Summer Blossom, Lehua Blossom, Christmas Berry Blossom, and Java Plum Blossom Honeys.
Lemon Juice or Apple Cider Vinegar
Organic Extra Virgin Olive Oil
Wai Meli Honey of your choice
In a glass jar (we often use an empty honey jar!) pour in lemon juice or apple cider vinegar
Add in the organic olive oil in a 2:1 ratio (2 for the oil, 1 for the acid from above)
Add a heaping spoonful of honey, and a pinch of salt
Tightly screw on the lid and shake!
Sample and adjust to taste - a little more honey for sweetness and roundness, more acid if needed, or more oil if it’s too tart for your liking.
If desired, experiment with additional flavors and seasonings like black pepper, crushed garlic, sesame seeds, orange zest, or whatever flavors you’re craving!
