Strawberries and Lehua Blossom Honey is one of our all-time favorite flavor combinations. The sweet, slightly tart acidity of fresh summer strawberries and the smooth, floral, sweet creaminess of Lehua Blossom Honey is simply exquisite. We combine them both in this simple stovetop simmer sauce to pour over fresh yogurt, pancakes, waffles, biscuits, or as a fresh jam with butter and sourdough toast. For as simple as this recipe is, it’s one you’ll keep coming back to for the rich, bright flavors and ease of preparation. It’s also packed with Vitamin C!

Ingredients

  • 2 c fresh or frozen strawberries
  • Filtered / clean water
  • Lehua Blossom Honey
  • Squeeze of lemon juice
  • Chia Seeds (optional)

Instructions

  1. In a small saucepan, on low heat, add strawberries and a splash of water.
  2. Simmer on low until strawberries of soft and slightly mushy if using frozen, or evenly warmed if using fresh, and most of the water is evaporated. Note: you may need to add more water a few times to fully defrost frozen strawberries.
  3. Add a squeeze of lemon juice and transfer mixture to a high-speed blender
  4. Add in a few heaping tablespoons of Lehua honey
  5. Optional: (Add in chia seeds for extra texture and protein)
  6. Blend until thoroughly mixed and add more honey to taste.
  7. Store in a glass jar and use within 3 days.
