A classic, honey mustard dressing, is both versatile and tasty. Utilize Wai Meli Honey for added nutritive benefits and a greater depth of flavor. We always have a homemade dressing on hand made with our honey. It's a simple, quick, and easy touch of homemade freshness for any meal.
Yields: 1 + 1/8 cups of dressing
Prep Time: 5 minutes
1/4 cup of Wai Meli Raw Honey (any varietal will do - our personal favorites for this recipe are Lehua Blossom or Christmas Berry Blossom Honey)
1/4 plus 1 teaspoon of Dijon mustard (organic)
1/4 cup raw apple cider vinegar
1/4 cup plus 2 tablespoons olive oil (cold-pressed)
1 1/2 teaspoons of Celtic sea salt
1. Combine honey, mustard, vinegar, lemon zest and salt in a blender and pulse for 10 seconds.
2. Turn the blender to medium speed and begin adding the oil slowly so that it incorporates smoothly. This should take about 15 seconds. Season with additional salt and olive oil or mustard to taste, until you reach your preferred balance of sweet, salt, and sour.
3. Store in a closed container (such as a mason jar), and refrigerate.
Enjoy on a green salad, as a dipping sauce for roasted potatoes, or even as a marinade!
