Big Island Moonbow Farms is a small-scale beekeeping venture located on Hawai’i Island. Inspired by the plight of the honeybee in Hawai’i and worldwide, we have been caring for honeybees in an organic fashion since 2011.
Throughout the year we typically harvest the following honey varieties: Christmas Berry, Macadamia Blossom, Eucalyptus, Lehua Blossom, combinations of all of these varieties as flowering seasons transition, and several Multifloral blends, of which the main nectar sources are undetermined. As this is truly a natural product, every single harvest is different, even by varietal. Each harvest of honey is completely unique. Although predominant characteristics might be similar in each variety, the nuances will always be distinct. The color, crystallization rate, and taste are rarely exactly the same. This continues to be a source of excitement and inspiration!
Also known as Brazilian Pepper or Wililaiki in Hawaiian, this non-native tree blossoms each year at a time when few other trees are flowering, making it an important crop for our honeybees.It provides a food source for the bees during this dearth period, and lucky for us, it also makes for delightful honey!
The bright notes and well-balanced flavors in this harvest contain a hint of spiciness. This honey also has a subtle green hue in its meniscus, a reminder of the intense floral source from which it originates.
